Fantastic fried flounder is only one recipe away. Cornmeal, black pepper, and paprika give this fish a crispy crust. Perfect fish for a sandwich with tartar sauce and pickles!
2 pounds fresh flounder fillets, or thawed if frozen
1 cup cornmeal
1/2 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon ground black pepper
cooking oil
Skin the fillets if necessary and cut into serving-size pieces.
In a shallow dish, combine the cornmeal, salt, paprika, and black pepper.
Heat the oil (1/8th-inch depth) in a heavy skillet over medium-high heat.
Dredge the fish pieces in the cornmeal mixture then place in the oil, in batches if needed. Cook for 2-3 minutes or until golden brown then carefully turn the fish over and cook for 2-3 more minutes or until the fish flakes easily with a fork.
Remove the fish from the pan and set on paper toweling to drain. Serve hot with tartar sauce and coleslaw, if desired.

this was great but you can't make it without dipping in egg and milk first; if you don't the cornmeal mixture will NOT stick to the fish. Also, you can add a little old bay to the cornmeal mixture. Serve with cocktail sauce and fresh lemon wedges and even the kids will eat it!

This recipe is missing something - the breading did not stick to the fish at all. I would suggest dipping the fish in egg before rolling in the corn meal mixture.
