Slow Cooker Sweet Sweet-Potatoes

ingredients
2 pounds sweet potatoes, peeled and grated
1/3 cup packed brown sugar (light or dark)
1/4 cup butter, melted
1/4 cup flaked coconut
1/4 cup chopped, toasted pecans
1/4 teaspoon ground cinnamon
1/4 teaspoon coconut extract
1/4 teaspoon vanilla extract
directions
Grease a crock pot.
Peel and shred the sweet potatoes (or cube them, if desired). Combine the sweet potatoes with the brown sugar, melted butter, flake coconut, pecans, and cinnamon in the crock pot.
Cover the crock pot and cook on low heat for 5-6 hours or on high heat for 2-3 hours (or until the potatoes are tender).
Just before serving, stir in the coconut and vanilla extracts. Serve hot.

I wanted to contribute to the Thanksgiving feast without having to vie for oven space/time. This recipe was perfect! Even the non-sweet potato eaters liked it! I left the yams in chunks after peeling, omitted the coconut. I also added about 3 cups of mini marshmallows on top about 10 minutes before serving; they don't brown, but melt in for that gooey sweet treat. Crockpot cooking times can vary; mine took only about 3 hours on LOW.

We started using this recipe off this site several years ago but I am just now getting aroudn to reviwing it. It is a family favorite - we make it every year without fail and it is always gobbled up!

I *loved* this Sweet Potato dish...which is unusual in the fact that up until now I have *never* liked a Sweet Potato dish that I've ever tried. However my Dad really loves them and unfortunately Mom's been very busy the last 3 years to make it. SOooo for Thanksgiving I decided to surprise Dad and make it for him. Though this recipe was involved in the hours it took to cook (I used the low setting for 10 hours) over night, it was quite simple in prep time and ingredients which drew me too it! Long story short--this dish was the "hit" of the Thanksgiving! Everyone loved it and my Dad was so happy he insisted on keeping the small amount of leftovers. Now for Christmas this year Mom's requested I make my Sweet Potato Dish again...but a double batch this time so Dad has lots more to keep for later!
